Breakfast Oat Pudding

To whip up this delightful breakfast treat, you’ll need:

  • 100gms of chopped walnuts
  • 4 tablespoons of honey or sweetener
  • 1 apple, peeled and finely chopped
  • 1 banana, peeled and cut into slices
  • 1 pear peeled and sliced
  • 1 egg
  • 1 cup of milk
  • 1 cup of your choice of berries

Fruit Preparation

  1. Prepare the fruits.
  2. Peel and dice the apple.
  3. Slice the banana into thin rounds.
  4. Peel and slice the pear.
  5. You can also add other fruits of your choice to enhance the flavour and texture of your pudding.

Prepare the Mixture

  1. In a large bowl, combine the oat flakes, chopped walnuts, honey or sweetener, chopped apple, sliced banana, sliced pear egg, and milk.
  2. Mix everything together until all the ingredients are evenly incorporated.
  3. Let sit for 10 mins so that the milk soaks into the oats. This is where the magic happens!

Addition of Berries

  1. Now, it’s time to add a pop of colour and sweetness with berries. Gently fold them into the mixture, ensuring they’re evenly distributed throughout.

Baking the Pudding

  1. Transfer the mixture into a lined, greased and floured pan, then pop it into a preheated oven at 180°C (350°F).
  2. Top with extra walnuts.
  3. Let it bake for approximately 45 minutes until the pudding turns golden and firm to the touch.

  1. Once baked to perfection, remove the pudding from the oven and allow it to cool slightly before serving.

Indulge in a breakfast that’s as satisfying as it is delicious!
