Easy Tomato Soup

The current cooler conditions encourage the moving us toward “comfort foods” like soups and there has never been a better time to make this quick, inexpensive and tasty meal in minutes!

Homestyle Tomato Soup

Ingredients

  • 1 can Big Red Tomato Soup (or your favourite brand) (440gms)
  • 1 can crushed tomatoes (440gms)
  • 1 punnet small cherry tomatoes (if desired)
  • 1 drizzle of oil for baking dish and saucepan
  • 2  medium onions finely diced
  • 250gms bacon, finely diced
  • 4 cloves garlic finely diced
  • 1 tablesp parsley
  • 1 tablesp chopped oregano or basil
  • 1 cup milk or cream and milk

Methods

  1. If using cherry tomatoes, place a little oil in a baking dish
  2. Set oven at 200C and place cherry tomatoes in baking dish
  3. Cook tomatoes just until they begin to split
  4. Remove from oven then set aside till serving
  5. Make your soup while tomatoes are cooking
  6. Place a little butter in a saucepan
  7. Cook finely diced bacon, onion and garlic in a saucepan till onion is clear
  8. Add can tomato soup
  9. Add can crushed tomatoes
  10. Allow to simmer for 5 mins
  11. Add 1 tablesp chopped parsley
  12. Add 1 tablesp chopped oregano leaves or basil
  13. Fold through milk and heat slowly
  14. Do not boil
  15. Serve into bowls
  16. Garnish with split cherry tomatoes and parsley or basil
  17. Garnish with a spoonful of cream on top if desired
  18. Serve with fresh crusty bread
