Energy Nut Bars

These are perfect for kids lunches and are a great source of protein and healthy fats meaning they contribute to keeping you fuller and satisfied for longer.

Energy Nut Bars

Ingredients

– ½ cup sunflower seeds

– ½ cup pumpkin seeds

– ½ cup almonds

– ½ cup puffed rice

– 2 tablespoon chia seeds

– 2 tablespoon flaxseed

– 2 tablespoon sesame seeds

– 30g butter

– 80mL honey

– 1 teaspoon vanilla

Methods

  1. In a large saucepan heat the honey and butter, this will foam and will begin to darken in colour.
  2. Heat the butter and honey to form a caramel. It’s ready when you can draw a spatula through the mixture and you briefly form a channel
  3. Combine all the nuts, seeds, and puffed rice together in a mixing bowl. 
  4. Line a loaf tin with baking paper
  5. Remove the caramel from the heat, stir through the vanilla
  6. Add the nuts and seeds
  7. While the energy bar mix is still hot, press into the bottom of the baking paper-lined loaf tin.
  8. Allow the energy bar mix to cool, you can do this on the bench or in the fridge
  9. Remove from the loaf tin and slice into bars
  10. Store in an airtight container

Tips:

  • If you live in a hot climate I would recommend storing the energy bars in the refrigerator. 
  • If you store them in the fridge they will be crunchy, if they are stored in a warm environment they will still be delicious but they will be a bit softer and chewier.
