Lemon Passionfruit Weet-Bix Slice

A delicious twist on the infamous chocolate Weet-Bix slice. It is an easy to whip up slice and is a quick “go to” recipe that everyone enjoys, give it a try!

Lemon Passionfruit Weet-Bix Slice



  • 185 grams butter, melted
  • 1 cup of coconut sugar
  • 3 Weet-Bix, crushed
  • 1 cup of flour
  • 1 cup of coconut
  • 1 teaspoon of baking powder

Lemon Passionfruit Icing

  • 2 cups of icing sugar
  • 1 lemon zest and juice 
  • 1 passionfruit (60ml)
  • 50 grams of butter, melted


  1. Preheat the oven to fan bake 180C.
  2. Prepare and grease a 23cm x 32cm tray with baking paper.
  3. Melt butter in a large microwave proof jug. 
  4. Add sugar and stir together.
  5. Crush Weet-Bix into a large bowl.
  6. Add flour, coconut, lemon zest and baking powder. 
  7. Mix together. 
  8. Pour into a lined tray and press down firmly.
  9. Bake for 20 mins. 
  10. Icing: Mix together icing sugar, butter, lemon juice and zest. 
  11. Add boiling water if needed.
  12. Ice the slice while it is still warm.
  13. Once cooled and icing has set, cut into slices.
  14. Store in an airtight container in the fridge or in a cool dry place.
