The Perfect Pea Patties

These Pea Patties are a great snack or they can be served as a meal with a side salad or mash. Give them a try and let us know what you think!

Pea Patties

1 cup frozen peas cooked as per instructions on pack

1 cup rice flour

50 grams feta cheese

½ cup cottage cheese (¼ to ¾ cup.)

1 tablespoon lemon zest

2 tablespoon mint

1 egg

1 cup frozen peas

Olive oil

  1. Whizz all ingredients (excluding the second measure of peas) in a food processor until smooth
  2. Crush the second measure of peas so that there are chunks of peas through the fritter batter.
  3. Add to fritter batter
  4. The batter will be quite thick.
  5. Heat a heavy-based pan on medium to low heat
  6. Add oil so you have a generous coating on the base of the pan.
  7. Allow the oil to heat
  8. A good way to test if the oil is at the right temperature to pan is to use a wooden spoon
  9. Pop the end of a wooden spoon into the pan, the oil is at a great temperature if small bubbles fizz around the wooden spoon.
  10. Drop spoonfuls of the mixture into the pan.
  11. The mixture is quite thick, so I use a damp spatula to flatten the fritters.
  12. Cook until golden on both sides
