Teriyaki Sushi Bowl

This Sushi Bowl with Teriyaki Chicken is great for a lunch or an evening meal for the whole family.

Once the prep is done, this can be set up on a table and served Family Style so  people can build their own bowl to their taste.

Ingredients

  • 600g diced chicken
  • 1 Tablespoon oil
  • 1 Cup Sushi rice
  • 1 Cup Edamame beans
  • Teriyaki sauce
  • 2 Cups Coleslaw
  • Toasted seaweed
  • Sliced vegetables (capsicum, carrot, cucumber)
  • 1 Tablespoon Sesame seeds
  • kewpie mayonnaise
  • pickled ginger
  • avocado

Methods

Sushi Rice

  1. Prepare your sushi rice as per the ingredients on the pack.

    Teriyaki Chicken
  2. Heat your oven to 200 degrees Celsius (400 F)
  3. Spread the diced chicken breast on a lined baking tray (with a lip), add the oil and move the chicken around until all the pieces are oiled. 
  4. Bake in your hot oven for 15 minutes. (While your chicken and Sushi rice is cooking, prepare your salad and condiments.
  5. Remove the chicken from the oven, and stir through the teriyaki sauce until the chicken is well coated. 

    Salad and Condiments
  6. Slice and or grate your vegetables: Capsicum, Cucumbers, Carrots, Avocado
  7. Toasted Seaweed: (Nori) Tear into pieces 
  8. Coleslaw: Make your coleslaw
  9. Edamame beans: Steam your edamame beans as per the instructions on the pack

    Build your sushi bowl
  10. Start with rice and/or coleslaw in the bottom of your bowl. 
  11. Top with your favourite vegetables
  12. Add toasted seaweed pieces
  13. Add the teriyaki chicken
  14. Add your favourite condiments: Japanese mayonnaise, extra teriyaki sauce, pickled ginger, wasabi, sesame seeds, soy sauce.
